Vegetable Curry


  • 1 large onion
  • 4 cloves of garlic
  • 1 thumb of ginger
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 red chilli pepper
  • 2 tablespoons of oil
  • salt to taste (quite a bit)
  • 200ml coconut milk
  • 400ml chopped tomatoes
  • juice of one lime
  • whatever vegetables you like: sweet potatoes, potatoes, cauliflower, broccoli, …


Finely chop the onions, garlic, ginger and chilli pepper. Fry them up in the oil until they are tender, then add the coconut milk and chopped tomatoes. Chop the vegetables and add them, and simmer until the vegetables are to your liking. Add the lime juice.

You can also add some frozen shrimp to add some taste.
