Beef Jerky

Ingredients

  • 500g lean beef, like topside, rump, or sirloin
  • juice of one lemon
  • 2 tbsp honey
  • 1/2 teaspoon worcestershire sauce
  • 3 tbsp Reggae-Reggae Sauce (BBQ/Jerk)
  • salt
  • pepper

Method

Cut the beef into thin strips, roughly 5 x 5 mm. Cut off all fat and sinew, otherwise the beef won't keep well when dried. It's easier to cut the beef if you freeze it a bit beforehand.

Mix the other ingredients together and put the beef strips into it.

Let the beef marinade for 12 - 24 hours in the fridge.

Put the beef strips onto baking paper into your dehydrator or into your oven at 70 degrees centigrade. Let dry for 4 - 6 hours or until the beef is evenly dark (almost black) and quite dry. Drying time depends on how thinly you have cut your beef.
