Mayonnaise
- 2 egg yolks
- pinch of salt
- 150 ml sunflower oil
- 150 ml olive oil
- 1 tbsp white wine vinegar
- 2 tbsp Dijon mustard
- pepper
Beat egg yolks with salt. Combine oils in a jug. Gradually add 1/4 of the oil to the beaten egg, one drop at a time, beating constantly.
Beat in vinegar, then add the rest of the oil slowly whilst beating. Stir in mustard and season to taste.
