Chinese Pancakes for shredded duck

  • 300g strong flour
  • 240ml boiling water
  • 1 tbsp sugar
  • some cooking oil

Mix the flour, sugar and water in a bowl (gradually adding the water), until you have a sticky dough. Knead until you have a homogeneous dough; adding more flour if necessary.

Let the dough rest for 30 minutes.

Roll out the dough to 3-4mm thickness. Cut with 7cm biscuit cutter, and put one circle with oil in between on top of another one. Then roll the two together out as thinly as you can.

Heat a non-stick frying pan, and fry the double pancakes for a minute each side, and then peel them apart.

Duck roasted at 170 degrees for 2 hours ,then 15 to 20 minutes @ 200 degrees.
