====== Vegan Cinnamon Buns ====== ===== Ingredients ===== ==== Dough ==== * 475g strong white flour * 25g corn flour * 7g dry yeast * 300ml oat milk * 75g vegan margarine ==== Filling ==== * 2 tbsp soft brown sugar * 2 tsp ground cinnamon * 50g chopped pecan nuts or walnuts * 250g dried chopped dates ==== Icing ==== * 75g vegan margarine * 3 tbsp golden syrup * 3 tbsp light brown sugar ===== Method ===== Mix the dough ingredients and knead the dough for 5 minutes. Let rise for an hour or until double in volume. Beat back, knead, and roll out to a 50cm x 30cm sheet. Now make the filling by pouring 120ml of boiling water over your 250g of chopped dates, and mix them up with a blender until smooth. Now add the chopped nuts, cinnamon and soft brown sugar, and mix into a paste. Spread the paste evenly over the rolled out dough, and roll up so that you get a 50cm long roll. Cut into 12 even rolls, and place in a baking paper lined tray. {{ :recipes:sweets:img-20190518-wa0000.jpeg?400 |}} Let rise for a further 45 minutes. You can speed down the process if you put the tray into the fridge.
