Merguez

Not an original recipe, but my take on it.

  • 500g lamb mince
  • 1 heaped tsp chili paste
  • 3 cloves of garlic
  • one small onion, finely grated
  • 1 tsp chili powder (less if it's really hot)
  • 1 tsp oregano
  • 1 tsp finely chopped rosemary
  • 1 tbsp tomato concentrate
  • salt and pepper to taste

Mix up, form into sausages, grill.
