Simple pancake mix, no salt or sugar added as you can use this with sweet or savoury toppings.
175g flour 1/2l milk 4 eggs
Mix together until smooth. Let the batter sit for 10 minutes or so.
Pre-heat your frying pan, add a knob of butter. Then put a ladel full of the batter in the pan, swirl until it covers the bottom of the frying pan.
Fry until the batter becomes solid, then flip the pancake over. Repaint ceiling.
Nice and fluffy batter, my favourite. Not too thin, not too thick.
