Breakfast Muffins

Recipe courtesy of Friedel Dippenaar

Pre-heat oven to 190 celcius

Butter a muffin pan

Cut slices of bread to resemble a square 4 inches x 4 inches

Press a slice of bread lightly into a “hole” in the muffin pan so the 4 corners stick up

Bake for 3-6 minutes until the bread starts to crisp

Remove from oven, put bacon or ham at bottom of each cup

Now crack an egg into each cup, season with salt and pepper, and grated cheese

Place muffin tin back in the oven for 10-15 minutes till white of egg has settled or the egg is cooked to your liking.

Remove and devour!!
