Upside-down Apple Cake

for the cake mix:

  • 175g unsalted butter
  • 175g soft brown sugar
  • 175g self-raising flour
  • 1 tsp baking powder
  • 50g flaked almonds
  • 3 eggs, beaten

for the base:

  • 30g unsalted butter
  • 30g soft brown sugar
  • juice of half a lemon
  • 2 apples, peeled, cored and sliced

Preheat oven to 190 degrees celsius. Cream together butter and flour in a mixing bowl. Add sugar and baking powder, then almonds and eggs. Stir until smooth. It's really important that you get a smooth paste, without letting the butter get liquid.

For the base, heat the butter in a non-stick frying pan. Add the sugar, caramelize, then add the lemon juice. Add the apple wedges and coat them in the caramel for two minutes. Don't overcook the apples.

Put apples into your baking form, then pour batter over them. Bake for 25 minutes.
